Keep Food From Sticking to Your Ceramic Bakeware

It’s every baker’s biggest question: How can I keep food from sticking to my ceramic bakeware?

You’ve been dreaming about baking the perfect pan of shortbread since you ordered a pan last week, and it’s finally here! After washing and drying your new pan, you go to our blog to find that recipe you had your eye on… Was it peanut butter shortbread, ginger shortbread, or one of the other recipes made specifically for your beautiful pan?

You decide on a recipe and start creaming butter and brown sugar in a stand mixer while you measure out spices and other dry ingredients. The oven is heating up, and your dough is ready to be kneaded on a lightly floured surface. Once your dough is nice and smooth, it’s ready to be pressed into your beautifully patterned pan — perhaps our classic Thistle Shortbread Pan. You press the dough into the pan, starting in the center and working your way out toward the edges, and then poke holes in the surface of the dough with a fork before sliding it into the oven.

You can hardly wait for the 35-minute bake time to end so that you can turn out your beautiful shortbread cookie!

Once it has for a few minutes, you turn it out onto a wooden cutting board… only to find that your dough stuck to the intricate pattern, leaving you with a pile of cookie crumbles.

Nobody wants their bakes to end in a heap of shapeless crumbles, so we’ve put together some tips to help you keep your food from sticking to your pottery.

Shortbread Pans

Perhaps the most devastating of botched recipes are in shortbread pans. With 20+ beautiful pans to choose from, no baker wants their shortbread cookie to stick to the pan.

Just spray your shortbread pan with cooking spray before you press your dough into the pan. Be sure to follow the recipe carefully, as baking and cooling times are very important to ensure a clean impression from your pan. Be sure to cut around the edges of your shortbread cookie before turning it out to keep the edges from sticking and causing the cooking to break on its way out.

Cookie Stamps

Unlike our shortbread pans, our cookie stamps should not be greased with cooking spray. To keep cookie dough from sticking to your stamps, lightly flour your stamp before pressing your cookie dough. It’s as simple as that!

Glazed Ceramic Bakeware

To keep your food from sticking to your glazed ceramic bakeware, simply spray the inside of your pottery with cooking spray or lightly oil or butter the baker before adding your ingredients.

Unglazed Ceramic Bakeware

Our unglazed ceramic bakeware includes our Artisan Unglazed Bakeware collection, our Bread Baking Cloche, and our Covered Bread Pan. Whether you’re baking bread, cake, or something with a bit more filling, you can keep your food from sticking to your unglazed ceramic bakeware by spraying it with cooking oil or generously oiling or buttering it. Then, sprinkle it with coarse flour or cornmeal.

Note: You do not need to soak or season any of our bakeware before use.
